We don't believe that there is an "absolutely correct taste" for coffee.
This is because the tastes desired vary depending on the food culture of the country or region.
On the other hand, each person's memories and lifestyles determine their own idea of "delicious."
For some, the refreshing acidity is refreshing and refreshing.
For others, the deep, muted bitterness is comforting.
I don't think it can be measured by a score, but rather there are countless "correct answers."
The roaster's role is not to "decide the right answer"
So what is our role as roasters?
It's not about deciding on roasting based on your own intuition,
We believe that it is important to carefully understand the preferences of each customer and adjust the beans to suit them .
That's why we use surveys and statistical research.
We try to capture customer feedback as objectively as possible.
Rather than relying solely on intuition and experience, as the name "KEIGAN" suggests, we attempt to discern the essence of things through data as well.
The blind coffee experience
"Blind Coffee" is a little experiment to let you experience that philosophy.
We have prepared two types of beans from the same origin and lot, with only different roasting profiles.
We will align the extraction conditions and have you compare the taste of "♦︎" and "♢" without any preconceived notions.
Which do you think tastes better?
How do you perceive the sourness, sweetness, aroma, and aftertaste?
And how other people feel.
