How to brew coffee




For a roastery that primarily sells coffee beans, the most important thing when testing the taste of coffee is to replicate the environment in which customers brew coffee at home.

The results obtained from grinding beans with a commercial grinder like the "Mahlkönig EK43" (costing 500,000 to 700,000 yen), brewing coffee, and conducting surveys, versus the results obtained from grinding beans with an advanced home-use grinder like the "Fuji Royal R-220" or "Kalita NEXT G2" (owned by regular drinkers of specialty coffee), brewing coffee, and conducting surveys, show that:

The latter provides more valuable data.


At our store, we prioritize replicating the environment in which customers brew coffee at home, and we conduct taste tests using coffee brewed with the following recipes. *Recipes are subject to change.

[1. Hand Drip (Hot) Recipe]

Dripper: "HARIO Immersion Dripper Switch SSD-360-B" *Used with switch open
Filter (for medium roast): "HARIO V60 Paper Filter 03W"
Filter (for city roast): "CAFEC Abaca Plus Conical Coffee Filter for 2-4 cups"
Grind size: Coarse enough for the hot water to drain in about 3 minutes 30 seconds to 4 minutes 30 seconds


"Medium Roast (end of 1st crack)"
Bean amount: 22g
Water amount: 300g
Water temperature: 92℃
Procedure:
① Rinse the paper.
② Pour 60g at a time, 5 times, waiting for the poured water to drain before each subsequent pour.
③ Extraction is complete when all water has drained.

"City Roast (just before 2nd crack)"
Bean amount: 20g
Water amount: 300g
Water temperature: 87℃
Procedure:
① Rinse the paper.
② Pour 60g at a time, 5 times, waiting for the poured water to drain before each subsequent pour.
③ Extraction is complete when all water has drained.



[2. Hand Drip (Iced) Recipe]

Dripper: "HARIO Immersion Dripper Switch SSD-360-B" *Used with switch open
Filter (for medium roast): "HARIO V60 Paper Filter 03W"
Filter (for city roast): "CAFEC Abaca Plus Conical Coffee Filter for 2-4 cups"
Grind size: Coarse enough for the hot water to drain in about 2 minutes 30 seconds to 3 minutes 30 seconds


"Medium Roast (end of 1st crack)"
Bean amount: 22g
Ice amount: 90g
Water amount: 200g
Water temperature: 92℃
Procedure:
① Rinse the paper, then add 90g of ice.
② Pour 50g at a time, 4 times, waiting for the poured water to drain before each subsequent pour.
③ Extraction is complete when all water has drained.
④ Stir to melt the remaining ice.
⑤ Pour into a glass with 130g of ice.

"City Roast (just before 2nd crack)"
Bean amount: 20g
Ice amount: 90g
Water amount: 200g
Water temperature: 87℃
Procedure:
① Rinse the paper, then add 90g of ice.
② Pour 50g at a time, 4 times, waiting for the poured water to drain before each subsequent pour.
③ Extraction is complete when all water has drained.
④ Stir to melt the remaining ice.
⑤ Pour into a glass with 130g of ice.



 
[3. Immersion Dripper Switch (Hot) Recipe]

Dripper: "HARIO Immersion Dripper Switch SSD-360-B"
Filter (for medium roast): "HARIO V60 Paper Filter 03W"
Filter (for city roast): "CAFEC Abaca Plus Conical Coffee Filter for 2-4 cups"
Grind size: Coarse enough for the hot water to drain in about 1-2 minutes after opening the valve 2 minutes 30 seconds from the start of extraction (3 minutes 30 seconds to 4 minutes 30 seconds from the start of extraction)

"Medium Roast (end of 1st crack)"
Bean amount: 22g
Water amount: 300g
Water temperature: 92℃
Procedure:
① Rinse the paper.
② Ensure the dripper switch is closed. Add coffee grounds and pour 300g of hot water, stirring to mix.
③ After pouring, stir with a muddler as the grounds will be floating.
④ Open the switch 2 minutes 30 seconds after the start of extraction.
⑤ Extraction is complete when all water has drained.

"City Roast (just before 2nd crack)"
Bean amount: 20g
Water amount: 300g
Water temperature: 87℃
Procedure:
① Rinse the paper.
② Ensure the dripper switch is closed. Add coffee grounds and pour 300g of hot water, stirring to mix.
③ After pouring, stir with a muddler as the grounds will be floating.
④ Open the switch 2 minutes 30 seconds after the start of extraction.
⑤ Extraction is complete when all water has drained.


 
[4. Immersion Dripper Switch (Iced) Recipe]

Dripper: "HARIO Immersion Dripper Switch SSD-360-B"
Filter (for medium roast): "HARIO V60 Paper Filter 03W"

Grind size: Coarse enough for the hot water to drain in about 1-2 minutes after opening the valve 2 minutes 30 seconds from the start of extraction (3 minutes 30 seconds to 4 minutes 30 seconds from the start of extraction)

[5. Cold Brew Coffee Recipe]

Filter: "Tokiwa Kogyo Cold Brew Coffee Pack"
Grind size: About the same coarseness as for the Hand Drip (Iced) recipe
Procedure:

① Place one cold brew coffee pack (35g) into a wide-mouthed container.
② Pour 525g to 700g of water (15 to 20 times the amount of coffee grounds) over the pack, ensuring the entire pack is thoroughly wet.
③ Steep in the refrigerator for 8-12 hours, then remove the cold brew coffee pack to complete.

※Adjust the water amount and steeping time to your preference.
※Store in the refrigerator and consume within approximately 24 hours of completion.



[6. Drip Bag Recipe]

Bean amount: 10g
Water temperature: 92℃ (medium roast) / 87℃ (city roast)
Procedure:

① Open the bag along the "cut here" arrow.
② Hold the tabs on both sides and fully open the mouth.
③ Hook onto the rim of a cup to secure it.
④ Pour 30g of hot water, 5 times, every 30 seconds.

※Adjust the amount of hot water to your preference. (e.g., if you prefer a slightly milder coffee, pour 35g of hot water, 5 times, every 30 seconds.)
