<La Esmeralda Farm>

Yellow Bourbon is said to have a higher sugar content than Red Bourbon, but it is very difficult to judge the degree of ripeness by its color, and it requires skilled hands. At Esmeralda Farm, we always provide extensive harvesting training to our staff, and we ask new employees to work as pickers to work with a commitment to quality. The processing is done by the traditional water washing method and drying in the sun until it is dry parchment. Defects are removed by skilled female staff, not by mechanical sorting.
