<How to brew>

We recommend aging the coffee for one to two weeks after roasting, and then brewing it at around 92°C. ( Click here for the brewing recipe we use.)

<Story>

This lot is by Niguse Gemeda, winner of the 2020 Ethiopia COE.
The Shantawene Drying Station is located in Shantawene village, Bensa, Sidama Region, Ethiopia. It is easily accessible from the main road and has received many cherries this year.

We receive fully ripe cherries grown by small-scale producers nearby. The most popular variety in this area is 74110. Due to the cool climate around Shantawene, the drying process takes around 20 days. The cherries are stirred several times a day to slowly reduce the moisture content.
