<How to brew>

We recommend aging the coffee for one to two weeks after roasting, and then brewing it at around 92°C. (Click here for the brewing recipe we use.)

<Lugali Coffee Washing Station>

Lugari Coffee Washing Station is located in Nyamasheke County in western Rwanda, surrounded by hills on the shores of Lake Kivu.
This large-scale facility, which also houses a dry mill, supports local employment and is a place closely linked to daily life. The market, which is held every Wednesday, sells livestock, fruits, and vegetables, and the local culture and daily life remain strongly evident.


<Rolex Natural>

The collected cherries are then gravity-sorted using water and carefully hand-selected, leaving only the fully ripe ones. They are then wrapped in new Nylex sheets and left to ferment in the sun for 72 hours. This unique process is named after the resemblance of the rolled up cherries to the Rwandan street food "Rolex."

After fermentation, the coffee is slowly dried for 35 to 45 days on a drying rack covered with a shade net. The coffee is stirred every 30 minutes to carefully adjust the moisture content, and this time-consuming and labor-intensive process results in a clean, deep cup of coffee.
