<How to brew>
For medium roasts (after the first crack), we recommend aging the beans for 1-2 weeks after roasting and brewing them at around 92℃, and for city roasts (just before the second crack), we recommend aging the beans for 3 days to 1 week after roasting and brewing them at around 87℃. (Click here for the brewing recipe we use.)

Production in this region began in the 1950s, making it relatively new in terms of coffee-producing culture, but due to its distinctive flavor similar to black tea and its full-bodied cup quality reminiscent of wine, coffee from the Yirgachefe region has rapidly come to be traded under the name 'YIRGACHEFE'.
Currently, it is one of the most difficult coffees to obtain due to its popularity in the specialty coffee markets of the United States and Northern Europe, but it is grown in a limited production area without expanding the production area. It is a masterpiece that will clear your mind from a cup of coffee in the beautiful Yirgachefe region surrounded by rivers, forests and lakes.
