<How to brew>

We recommend aging the coffee for one to two weeks after roasting, and then brewing it at around 92°C. ( Click here for the brewing recipe we use.)

<Story>

This lot is produced by Niguse Gemeda, winner of the Ethiopia Cup of Excellence in 2020. Karamo Washing Station (WS) collects cherries not only from his own farm but also from small-scale producers in the surrounding area.
Niguse has built extremely strong relationships with producers in this region, having worked to spread understanding of quality over the medium to long term. The quality of the cherries is a testament to the results of his persistent efforts to persuade producers to bring in high-quality cherries.

Karamo WS is Niguse's refinery, specializing in quality, and has extremely strict standards. From selecting the cherries by ripeness to determining their moisture content, a significant number of people are involved in each step, with a strict quality-first approach. The coffee is dried slowly over 18 to 22 days on African beds, slowly reducing the citricity to around 11.5%.
