<How to brew>
We recommend aging the coffee for 1-2 weeks after roasting and brewing it at around 92℃. ( Click here for the brewing recipe we use.)

This lot is produced by Niguse Gemeda, winner of the 2020 Ethiopia Cup of Excellence. Karamo Washing Station (WS) collects cherries not only from his own farm but also from small-scale producers in the surrounding area.
Mr. Nigusse has built extremely strong relationships with producers in this region, over the medium to long term, through which he has spread understanding of quality. The quality of the cherries is a testament to his persistent efforts to get producers to bring in high-quality cherries.
Karamo WS is the refinery that specializes in quality for Mr. Nigusse, and has very strict standards. From cherry ripeness selection to detailed moisture content, a large number of people are devoted to each task, and quality comes first. The drying period is 18 to 22 days on African beds, slowly reducing the alcohol content to about 11.5%.
