Acacia Hills is a farm located at the foot of Mount Oldeani in the Ngorongoro area of Tanzania, which has been engaged in the production of specialty coffee since 2007.
At that time, Tanzanian coffee was only recognized as a commodity, and the farm set out to increase its value by prioritizing quality in its production. Blessed with an environment of nearly 1,900m above sea level, the farm has steadily improved quality by accumulating meticulous efforts not often seen in other regions, such as soil analysis, shade management, controlled fermentation, and drying under shade.
The farm is adjacent to the Ngorongoro Conservation Area and is located in a rich natural environment inhabited by diverse wildlife. Within the environmental constraints that prohibit further development, Acacia Hills continues to produce coffee while seriously addressing environmental protection.
In addition, by providing stable employment and fair wages to the community, new shops and businesses have emerged around the farm, contributing to the revitalization of the local economy. The farm also has accommodation facilities and accepts staff who can work year-round, valuing its deep connection with the community.
Harvesting is done by experienced pickers (about 90% of whom are women), who carefully select only ripe red cherries, one by one. After harvesting, unripe and overripe beans are carefully removed by hand sorting. After removing the pulp with a pulper, the mucilage is broken down in fermentation tanks over 36 hours, and then finished by washing. Drying of top-grade beans is managed on African beds under shade nets, taking a minimum of 15 days or more until the parchment is sufficiently dry. Then, after hulling and grading at the dry mill, the beans are carefully finished.
