Finca Milan focuses solely on varieties that are attracting global attention and is constantly developing new processing methods. They are particularly active in the "culturing process," which enhances the flavor of varieties that are not as flamboyant as "Geisha" or "Bourbon," as well as "Castillo," a disease-resistant and easy-to-grow variety, thereby expanding the possibilities of coffee.
In collaboration with universities and research institutions, they are also analyzing data by comparing and investigating changes in the types and proportions of bacteria brought about by the "culturing process" with those of regular "Castillo."
Finca Milan is located in the Andes mountains of Risaralda, extending from 1400-1800M in volcanic soil with hot springs. They produce a diverse range of micro-lots along with crops such as plantains (green bananas), corn, and beans. Everyone who works on the farm is like family, and it is evident that the entire team is dedicated to improving the farm's production and processes.
Watermelon is distilled, separating the watermelon itself (must) from the fruit's oils and alcohol.
Then, the depulped coffee is placed in a bioreactor, where watermelon must and yeast are added, and nitrogen gas is injected for anaerobic fermentation.
After some time during the fermentation process, the oils extracted during the watermelon distillation are added. Andres explains that this is because the fruit oils impart unique flavors during fermentation. Finally, after more time, the alcohol (the liquid that ferments during distillation) is added to the bioreactor, and fermentation continues for several more days. The reason alcohol is added last is to prevent over-fermentation if it were included from the beginning.
