Located in the north of Yunnan, Yuan Yi Yuan Farm in Tokuhiro has collaborated with the Tokuhiro Tropical Crops Research Institute to create a honey process fermented with yeast specifically for coffee. The Tokuhiro Tropical Crops Research Institute is dedicated to improving coffee varieties and cultivating seedlings every year, and is also focusing on coffee processes.
<Yeast fermentation honey>
In this honey process, ripe coffee cherries are first harvested, washed, and the coffee pulp is removed. Generally, the removed coffee pulp is used as fertilizer or cascara tea, but in this refining process, the removed coffee pulp is collected and placed in a tank of water together with parchment coffee with mucilage. At the same time, coffee yeast is added and fermented for 150 hours. After fermentation is complete, the cherries are dried without being washed.
