<How to brew>
We recommend aging the coffee for 1-2 weeks after roasting and brewing it at around 92℃. ( Click here for the brewing recipe we use.)

<Purification method>
1. Selecting ripe cherries:
We carefully harvest only the cherries when they are fully ripe and when their flesh (mucilage) contains the most sugar.
2. Sterilization with ozone:
By ozonating the whole cherry, the impact of germs and undesirable microorganisms during fermentation is minimized.
3. Cherry soaking × anaerobic fermentation (72 hours):
The cherries are completely submerged in the liquid and fermented for 72 hours in an oxygen-free environment. Yeast is added here to fix the aroma and flavor precursors, enhancing the fruitiness and wine-like depth. In addition, a pressurized environment is created in the tank to enhance the extraction effect.
4. Drying (low temperature dehumidification):
We use a dehumidifier to gently remove moisture, which helps to prevent over-oxidation and over-fermentation while preserving the coffee's soft aroma.
5. Stabilization, sorting and dehulling:
After being stored and stabilized in a cool and stable environment, they are sorted and shelled according to quality standards.
