<How to brew>
For medium roasts (after the first crack), we recommend aging the beans for 1-2 weeks after roasting and brewing them at around 92℃, and for city roasts (just before the second crack), we recommend aging the beans for 3 days to 1 week after roasting and brewing them at around 87℃. (Click here for the brewing recipe we use.)

<Purification method >
The cherries are fermented for two days, then depulped and fermented again without water for three days, before being washed twice and dried on raised drying beds.
<Chiroso>
Ethiopian native species.
This variety has been planted in Urrao, Antioquia, for a long time, and its green beans are long-bean shaped. It is cold-resistant, so it is suitable for cultivation at high altitudes, and is said to have been discovered by Jose Arcadio Caro. The name Chiroso was given to it by Carmen Montoya, winner of the 2014 Cup of Excellence (Bella Vista Farm).
