<How to brew>
We recommend aging the coffee for 1-2 weeks after roasting and brewing it at around 92℃. ( Click here for the brewing recipe we use.)

<Story>
Located in Gedeb District, Gedeo Zone, South Ethiopia Region, Idid has long been recognized as a top coffee producing region under the name of Yirgachefe.
Mr. Desalegn Hijo (hereinafter referred to as Mr. Desalegn) produces coffee in the village of Trisse together with other small-scale producers in the surrounding area. As a single farmer, he has a relatively large facility, and he purchases new drying beds every three years and performs quality control while investing in equipment.
Before pulping, the cherries are placed in a sealed Grain Pro and left to ferment in a near anaerobic environment for 72 hours before being refined. The mixture is stirred repeatedly during drying to ensure even distribution, and kept covered during the day when the sun is strong and at night when there is a risk of rain.
