<How to brew>

We recommend aging the coffee for one to two weeks after roasting, and then brewing it at around 92°C. (Click here for the brewing recipe we use.)

<Pioneer of Honey Process>

Juan Ramon Alvarado is a member of the prestigious Alvarado family, which has been involved in coffee cultivation for 150 years, and is an agricultural engineer who majored in tropical botany at the University of Costa Rica. He founded the Brumas del Surqui Micro Mill in 2000 and is known worldwide as a pioneer who systematically established the honey process for yellow, red, and black coffee.
Heredia, where the mill is located in the Central Valley, is an urban area, but the winds blowing through the hills create drying conditions, making it a unique environment for producing high-quality coffee during the harvest season from December to March.

Blue Mas has always placed great importance on the uniformity and sugar content of the cherries harvested, in pursuit of creating a clean, transparent flavor. This is an extremely important element that directly affects the clarity, length, and sweetness of the cup, and is also an area that Juan Ramon has always been most particular about.
However, in Heredia, a suburb of the capital, San José, residential development accelerated, causing land prices to soar. As farm management became more difficult each year, farmers were forced to shift to cultivating higher-value varieties and downsize their farms, gradually reaching their limits in the production of bull trout.

So Burumas chose Taras as their next stage. They moved to the highlands at an altitude of 1,950-2,100 meters, which was previously considered too cold for coffee production, in search of new possibilities, and began planting trees in 2012.
Initially, they focused on Villa Sarchi, and later experimented with Bourbon, SL28, and even Geisha. It was a challenge growing in a completely different environment, with a completely different climate and soil, but their many years of agricultural techniques and spirit of inquiry have supported them, resulting in coffee that makes the most of Taras' unique characteristics.
Don José Farm has become a symbol of the company's continued evolution in a different high altitude terroir while continuing to carry on the spirit of Burmas.
