<Story>

This lot is by Niguse Gemeda, winner of the 2020 Ethiopia COE.

Molke Dried Station uses cherries grown on his own farm and by small producers in the surrounding area. Cherries are grown at a high altitude that is rare even on a global scale, and the fruit develops rich acidity and flavor through the slow ripening process. In addition, because the average temperature is low at around 14-15°C, there are almost no pests and no pesticides are used.

Here, the refining process is carried out with a focus on quality. The cherries are carefully hand-selected and dried for approximately 18 to 20 days. Originally used as pastureland, the area is covered with natural forests, and you can see ensete (false bananas) and grazing cows in the surrounding area. The location is very well ventilated. Even if the sun is a little strong, it does not put too much strain on the cherries, making it an environment that allows for slow drying.
